Instructions
- Heat olive oil or butter in a skillet over medium heat.
- Add chorizo sausage and cook until browned and cooked through, about 5-7 minutes.
- In a bowl, whisk together eggs with a pinch of salt and pepper.
- Push the chorizo to one side of the skillet and pour the eggs into the empty side.
- Scramble the eggs until cooked to your preference, mixing with the chorizo.
- Serve warm, optionally with tortillas and cheese.
Notes
