- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blackberries
- 1/4 cup brown sugar
- 2 tablespoons butter (melted)
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Mix the all-purpose flour, whole wheat flour, sugar, baking powder, and salt in a large bowl.
- Whisk together the milk, vegetable oil, egg, and vanilla extract in another bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blackberries.
- Combine the brown sugar, melted butter, and cinnamon in a small bowl to make the streusel topping.
- Divide the muffin batter evenly among the prepared muffin cups and sprinkle the streusel on top.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool slightly before serving.
Notes
For best results, do not overmix the batter. You can use frozen blackberries by thawing and draining them before use.
