Description

A delightful and comforting garlic soup perfect for chilly evenings, featuring rich flavors and a creamy texture.


Ingredients

Scale
  • 1 head of garlic
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the top off the head of garlic and drizzle with olive oil. Wrap it in aluminum foil and roast in the oven for about 30-35 minutes until soft.
  2. Heat olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent.
  3. Squeeze the roasted garlic into the pot and stir to combine.
  4. Pour in the vegetable broth and bring to a simmer. Add thyme, salt, and pepper to taste.
  5. Simmer for 15-20 minutes to allow flavors to meld.
  6. Blend the soup until smooth, if desired.
  7. Serve hot, garnished with fresh parsley and alongside crusty bread.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months. Reheat on the stove or microwave.
