- 1 head of garlic
- 4 cups vegetable broth
- 1 onion, chopped
- 2 tablespoons olive oil
- 1 tablespoon fresh thyme (or 1 teaspoon dried thyme)
- 1 tablespoon fresh parsley, chopped
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- Preheat your oven to 400°F (200°C). Cut the top off the head of garlic and drizzle with olive oil. Wrap it in aluminum foil and roast in the oven for about 30-35 minutes until soft.
- Heat olive oil in a pot over medium heat. Add the chopped onion and sauté until translucent.
- Squeeze the roasted garlic into the pot and stir to combine.
- Pour in the vegetable broth and bring to a simmer. Add thyme, salt, and pepper to taste.
- Simmer for 15-20 minutes to allow flavors to meld.
- Blend the soup until smooth, if desired.
- Serve hot, garnished with fresh parsley and alongside crusty bread.

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months. Reheat on the stove or microwave.
