A delightful twist on the classic Reuben sandwich, these crispy balls are perfect for parties or as a fun appetizer.

Ingredients

Scale
  • 1 cup chopped corned beef
  • 1 cup sauerkraut
  • 1 cup Swiss cheese, chopped
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 2 tablespoons mustard
  • Salt to taste
  • Pepper to taste
  • Oil for frying

Instructions

  1. Combine chopped corned beef, sauerkraut, Swiss cheese, mustard, and season with salt and pepper in a bowl.
  2. Form the mixture into small balls.
  3. Dip each ball in beaten eggs, then roll in breadcrumbs to coat.
  4. Heat oil in a deep skillet over medium heat.
  5. Fry the balls until golden and crispy, about 3-4 minutes.
  6. Remove from oil and drain on paper towels.
  7. Serve hot with additional mustard for dipping.

Notes

Chop corned beef and Swiss cheese finely for better texture. Refrigerate the balls for at least 30 minutes before frying for the best results.
