Description

A fresh and flavorful Cobb salad combining grilled shrimp with mixed greens and healthy toppings.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 4 cups mixed greens (romaine, spinach, arugula)
  • 4 slices bacon, cooked and crumbled
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup blue cheese, crumbled
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat. Season the shrimp with salt and pepper, then grill for 2-3 minutes on each side until they are opaque and cooked through.
  2. Combine in a large bowl the mixed greens, avocado, cherry tomatoes, bacon, blue cheese, and red onion.
  3. Whisk together the olive oil and lemon juice in a small bowl, then season with salt and pepper.
  4. Drizzle the dressing over the salad and toss gently to combine.
  5. Top with grilled shrimp and serve immediately.

Notes

For best results, use fresh shrimp and store leftovers in an airtight container. Keep the dressing separate to maintain salad crispness.
