Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 medium zucchini, grated
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Toothpicks or kitchen twine for securing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the grated zucchini, feta cheese, parsley, garlic, oregano, salt, and pepper. Mix well to create the filling.
  3. Place the chicken breasts between two pieces of plastic wrap. Gently pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.
  4. Spoon an equal amount of the filling onto each chicken breast. Roll the chicken tightly to enclose the filling and secure the ends with toothpicks or kitchen twine.
  5. In an oven-safe skillet, heat olive oil over medium-high heat. Add the stuffed chicken breasts and sear them for 3-4 minutes on each side until golden brown.
  6. Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
