An easy and customizable no-bake treat combining smooth white chocolate, chewy marshmallows, and crunchy nuts, perfect for gifts or gatherings.

- 200g white chocolate
- 1 tbsp grapeseed oil
- 100g mini marshmallows
- 50g chopped pistachios
- 50g shredded coconut
- 8 glacé cherries (for topping)
Instructions
- Prepare the pan: Lightly grease a 20cm (8″) square pan and line it with baking paper. Set aside the reserved glacé cherries for topping.
- Measure and arrange mix-ins: Combine marshmallows, chopped pistachios, and shredded coconut in a large mixing bowl.
- Melt the white chocolate: In a heatproof bowl, microwave the white chocolate and grapeseed oil in 30-second increments until smooth.
- Combine the mixture: Stir the melted chocolate into the marshmallow mix until evenly coated.
- Fill the pan: Pour the mixture into the prepared pan, spread evenly, and decorate the top with reserved glacé cherries and chopped pistachios.
- Chill and set: Refrigerate for 3 hours until firm, then cut into chunks for serving.
Notes
Feel free to customize with different nuts, fruits, or chocolate types. Allow to sit at room temperature for a few minutes before cutting for cleaner edges.
