Description

A quick, customizable recipe for melt-in-your-mouth white chocolate cranberry fudge perfect for holidays or gifts.


Ingredients

  • 2 cups granulated sugar
  • 1/2 cup sour cream
  • 1/2 cup unsalted butter
  • 1/4 tsp salt
  • 1 1/2 cups white chocolate chips
  • 1 jar (7 oz) marshmallow creme
  • 1 cup dried cranberries

Instructions

  1. Line a 9×13 baking dish with foil and lightly spray with cooking spray. Set aside.
  2. Combine sugar, sour cream, butter, and salt in a heavy saucepan. Melt butter over medium heat, stirring often.
  3. Bring to a boil, stirring frequently for 10-12 minutes.
  4. Continue cooking until reaching the soft-ball stage (~238°F), about 8-12 minutes.
  5. Remove from heat and stir in white chocolate chips until melted and glossy.
  6. Add marshmallow creme and vanilla, stirring until smooth.
  7. Fold in dried cranberries until evenly distributed.
  8. Pour into the prepared dish and smooth the top. Tap to remove air bubbles.
  9. Cool to room temperature, then chill for 2-6 hours before cutting into squares.

Notes

Cover loosely with plastic wrap during the first hour of cooling to prevent crusting.
