Description

This Ultimate Velvety Mushroom Soup is a wonderful, creamy, and rich soup made with earthy mushrooms and aromatic herbs. It’s a comforting dish perfect for any occasion, delivering incredible flavors and a velvety texture.

Ingredients

Scale
  • 1 pound fresh mushrooms (such as cremini or button), sliced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat the olive oil and butter over medium heat until melted.
  2. Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
  3. Add the sliced mushrooms to the pot, stirring occasionally. Cook until the mushrooms release their moisture and begin to brown, about 5-7 minutes.
  4. Pour in the vegetable broth, and add the thyme, salt, and black pepper. Bring the mixture to a boil.
  5. Reduce the heat and let the soup simmer for 10 minutes to allow the flavors to meld.
  6. Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.
  7. Stir in the heavy cream and heat through for another 2-3 minutes.

Notes

  • For the best flavor, choose fresh mushrooms.
  • If you prefer a thicker soup, reduce the amount of broth. For a thinner soup, add a little more cream or broth.
  • Experiment with herbs like rosemary or sage for a different flavor profile.
  • Consider adding cooked chicken or beans for a heartier meal.
  • Serve with a side salad or crusty bread.
  • Store leftovers in an airtight container in the refrigerator for 3-4 days.
  • Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
