- 1 teaspoon salt

Instructions
- In a large pot, heat the olive oil and butter over medium heat until melted.
- Add the diced onion and minced garlic, sautéing until the onion becomes translucent, about 3-4 minutes.
- Add the sliced mushrooms to the pot, stirring occasionally. Cook until the mushrooms release their moisture and begin to brown, about 5-7 minutes.
- Pour in the vegetable broth, and add the thyme, salt, and black pepper. Bring the mixture to a boil.
- Reduce the heat and let the soup simmer for 10 minutes to allow the flavors to meld.
- Using an immersion blender, blend the soup until smooth and creamy. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches.
- Stir in the heavy cream and heat through for another 2-3 minutes.
