- 1 cup sun-dried tomatoes in oil, drained and chopped
- 2 cups baby spinach leaves
- 1 (14.5 oz) can diced tomatoes, undrained
- ½ cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 (20 oz) package refrigerated cheese tortellini
- ½ cup grated Parmesan cheese
- ½ cup shredded mozzarella cheese
- Fresh basil, for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for another 30 seconds, stirring often.
- Add sun-dried tomatoes and baby spinach to the skillet, stirring until the spinach is wilted, about 2 minutes.
- Pour in the can of diced tomatoes (with juice), chicken broth, heavy cream, Italian seasoning, salt, and black pepper. Stir well to combine.
- Bring the sauce to a gentle simmer, then stir in the cheese tortellini. Cover and let cook for 5-7 minutes, or until the tortellini are tender, stirring occasionally.
- Uncover the skillet and sprinkle in the Parmesan and mozzarella cheeses. Stir until the cheese is melted and the sauce is creamy, about 2-3 minutes.
- Remove from heat, sprinkle with fresh basil, and serve hot.
