Instructions
- Make the Espresso Cookie Dough: Cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla and espresso powder. Whisk together flour, cocoa powder, baking soda, and salt in a separate bowl. Gradually mix dry ingredients into wet mixture until dough is soft but not sticky.
- Bake the Cookies: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper. Scoop dough using a small cookie scoop or tablespoon, spacing about 2 inches apart. Bake for 9–11 minutes until edges are set and centers are slightly soft. Let cool completely.
- Make the Tiramisu Filling: Blend mascarpone, powdered sugar, and vanilla until smooth. Stir in cooled espresso. Gently fold in whipped cream until filling is creamy and holds its shape. Chill for 10–15 minutes to thicken.
- Assemble the Sandwich Cookies: Pair cookies by size. Pipe or spoon filling onto the flat side of one cookie. Gently press another cookie on top. Dust with cocoa powder.
