Description

Ingredients

  • 4 ripe bananas, mashed
  • 6 slices of day-old bread, torn into pieces (preferably brioche or challah)
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup raisins or chocolate chips (optional)
  • Whipped cream, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish (about 9×9 inches).
  2. In a large mixing bowl, combine the torn pieces of bread and set aside.
  3. In another bowl, whisk together the mashed bananas, milk, sugar, eggs, vanilla extract, cinnamon, and salt until well blended.
  4. Pour the banana mixture over the torn bread. Gently fold to combine, ensuring all the bread is soaked in the custard.
  5. If desired, fold in the raisins or chocolate chips for an extra layer of flavor.
  6. Pour the bread and custard mixture into the greased baking dish, spreading it evenly.
  7. Place the dish in the preheated oven and bake for 45-50 minutes or until the top is golden brown and a knife inserted in the center comes out clean.
  8. Once baked, remove the pudding from the oven and allow it to cool for about 10-15 minutes before serving.
