  • 2 tablespoons water
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 teaspoon salt
  • Freshly ground black pepper to taste
  • Olive oil spray for baking
  • Optional: swap flaxseed for 1 regular egg if not vegan

Instructions

  1. Prepare the Flax Egg (if using): In a small bowl, mix ground flaxseed with water. Let sit 10 minutes until thickened.
  2. Grate and Drain the Sweet Potato: Peel and grate sweet potatoes. Squeeze out moisture using a towel or cheesecloth.
  3. Mix the Ingredients: In a bowl, combine grated sweet potatoes, onion, flour, garlic powder, paprika, salt, pepper, and flax egg (or regular egg).
  4. Form the Patties: Scoop about 2 tablespoons of mixture and shape into flat rounds on a parchment-lined baking sheet.
  5. Bake the Hash Browns: Preheat oven to 200°C (390°F). Spray with olive oil and bake 20 minutes. Flip and bake another 10–15 minutes until golden and crisp.
