- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt
- Freshly ground black pepper to taste
- Olive oil spray for baking
- Optional: swap flaxseed for 1 regular egg if not vegan
Instructions
- Prepare the Flax Egg (if using): In a small bowl, mix ground flaxseed with water. Let sit 10 minutes until thickened.
- Grate and Drain the Sweet Potato: Peel and grate sweet potatoes. Squeeze out moisture using a towel or cheesecloth.
- Mix the Ingredients: In a bowl, combine grated sweet potatoes, onion, flour, garlic powder, paprika, salt, pepper, and flax egg (or regular egg).
- Form the Patties: Scoop about 2 tablespoons of mixture and shape into flat rounds on a parchment-lined baking sheet.
- Bake the Hash Browns: Preheat oven to 200°C (390°F). Spray with olive oil and bake 20 minutes. Flip and bake another 10–15 minutes until golden and crisp.
- Serve Hot and Crispy: Enjoy immediately or store for meal prep.
