Ingredients
- Boneless, skinless chicken breasts
- Sweet chili sauce
- Bell peppers
- Carrots
- Cucumbers
- Whole wheat tortillas
- Fresh cilantro or mint
- Lime juice
Instructions
- Start by cutting the chicken breasts into bite-sized pieces. Season with salt and pepper.
- In a skillet over medium heat, add oil and cook the chicken until golden brown and cooked through, about 5-7 minutes.
- Pour in the sweet chili sauce and stir to coat the chicken. Cook for another 2-3 minutes.
- Chop the vegetables, julienne the bell peppers and carrots for crunch.
- Lay out the tortilla. Start with a layer of chicken, then add fresh veggies, herbs, and lime juice.
- Fold the sides of the tortilla and roll it up tightly from the bottom. Secure with a toothpick if needed.
- Cut the wraps in half for easy handling and serve with extra sweet chili sauce or lime wedges.
