Description

A viral TikTok recipe for Crock Pot Swamp Potatoes, featuring smoked sausage, tender potatoes, and green beans in a flavorful one-pot Southern meal.


Ingredients

  • 3 pounds golden potatoes, cubed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 10 oz Diced tomatoes with Green Chilies (Rotel)
  • 1 Tablespoon Olive Oil
  • 1 teaspoon Cajun Seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pound Smoked sausage (Andouille or Cajun Smoked sausage recommended), sliced
  • 1 pound green beans, trimmed
  • 1 packet onion soup mix
  • 1/2 cup butter

Instructions

  1. Cube the potatoes and place them in the bottom of a slow cooker.
  2. Add the diced onions, minced garlic, and the can of Rotel on top of the potatoes. Mix everything together.
  3. Drizzle the olive oil over the mixture. Sprinkle with Cajun seasoning, salt, and pepper. Toss well to coat.
  4. Arrange the sliced smoked sausage on top of the potatoes.
  5. Place the fresh green beans over the sausage.
  6. Sprinkle the onion soup mix evenly over the green beans. Place the stick of butter on top.
  7. Cover the slow cooker and cook on low for 6 to 7 hours, or until the potatoes are tender. Stir about halfway through the cooking process.
  8. Once the potatoes are tender, the Swamp Potatoes are ready to serve.

Notes

  • If fresh green beans are not available, frozen green beans can be used. Add them during the last hour of cooking.
  • Canned greens can also be used, but add them about halfway through cooking to prevent them from becoming too soft.
  • Andouille or Cajun Smoked sausage are recommended for this recipe.
