Description
A succulent whole chicken roasted to perfection and stuffed with a flavorful mixture of fresh apples, dried cranberries, herbs, and bread for a festive, juicy, and aromatic dinner centerpiece.

- 1 whole chicken (about 4 lbs), giblets removed
- 1 cup dried cranberries
- 1 large apple, diced
- 2 cups day-old bread cubes
- 1 medium onion, finely chopped
- 2 tablespoons fresh parsley, chopped
- 2 teaspoons dried thyme
- 3 tablespoons unsalted butter, melted
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Pat the chicken dry with paper towels. Season the inside and outside of the chicken with salt and black pepper.
- In a large bowl, combine dried cranberries, diced apple, bread cubes, chopped onion, parsley, dried thyme, and melted butter. Toss until well mixed.
- Fill the chicken cavity with the cranberry and apple stuffing, packing it gently so as not to overfill.
- Place the stuffed chicken breast-side up in a roasting pan. Brush the outside with additional melted butter if desired.
- Roast the chicken in the preheated oven for about 1 hour and 35 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
- Let the chicken rest for 10 minutes before carving. Serve with pan juices and extra stuffing.
