Stuffed Roast Chicken with Cranberries and Apples

Description

A succulent whole chicken roasted to perfection and stuffed with a flavorful mixture of fresh apples, dried cranberries, herbs, and bread for a festive, juicy, and aromatic dinner centerpiece.


Ingredients

  • 1 whole chicken (about 4 lbs), giblets removed
  • 1 cup dried cranberries
  • 1 large apple, diced
  • 2 cups day-old bread cubes
  • 1 medium onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons dried thyme
  • 3 tablespoons unsalted butter, melted
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Pat the chicken dry with paper towels. Season the inside and outside of the chicken with salt and black pepper.
  2. In a large bowl, combine dried cranberries, diced apple, bread cubes, chopped onion, parsley, dried thyme, and melted butter. Toss until well mixed.
  3. Fill the chicken cavity with the cranberry and apple stuffing, packing it gently so as not to overfill.
  4. Place the stuffed chicken breast-side up in a roasting pan. Brush the outside with additional melted butter if desired.
  5. Roast the chicken in the preheated oven for about 1 hour and 35 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  6. Let the chicken rest for 10 minutes before carving. Serve with pan juices and extra stuffing.
