Description

Street Corn Chicken Chili is a hearty and flavorful dish combining chicken, corn, and spices.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups corn (fresh, frozen, or canned)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups chicken broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 cup heavy cream (or sour cream)
  • Fresh cilantro, for garnish
  • Lime wedges, for serving
  • Optional toppings: shredded cheese, avocado, jalapeños, tortilla chips

Instructions

  1. In a large pot, add the chicken breasts and cover with water. Bring to a boil and cook for about 15 minutes, or until fully cooked. Remove and shred the chicken, then set aside.
  2. In the same pot, add a splash of oil over medium heat. Sauté the diced onion until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  3. Stir in the corn, diced tomatoes (with juice), black beans, chicken broth, chili powder, cumin, paprika, salt, and pepper. Bring the mixture to a simmer.
  4. Once the chili is simmering, add the shredded chicken back into the pot. Stir well to combine all ingredients.
  5. Allow the chili to simmer for about 15-20 minutes, stirring occasionally. This will help the flavors meld together.
  6. Once the chili is ready, stir in the heavy cream (or sour cream) to add a creamy texture. Let it heat through for about 2-3 minutes.
  7. Taste the chili and adjust the seasoning as needed. You can add more salt, pepper, or spices to suit your taste.
  8. Remove from heat and garnish with fresh cilantro. Serve hot with lime wedges and your choice of toppings.
