Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup honey
  • 1 tablespoon rice vinegar
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup fresh basil leaves, chopped
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions, sliced (for garnish)

Instructions

  1. Cut chicken thighs into bite-sized pieces. Season with salt and pepper.
  2. In a bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, and crushed red pepper flakes.
  3. Pour the marinade over the chicken in a zip-top bag. Seal and refrigerate for at least 30 minutes (optional marination).
  4. Heat vegetable oil in a large skillet over medium-high heat.
  5. Remove chicken from marinade (reserve marinade) and place in the skillet. Cook for 5-7 minutes until browned and cooked through.
  6. Pour reserved marinade over chicken. Simmer for 5 minutes until the sauce thickens and becomes sticky.
  7. Add chopped basil leaves, stir well, and cook for 1 minute.
  8. Taste and adjust seasoning if necessary.
  9. Remove from heat and garnish with sliced green onions.
