Instructions
- Heat olive oil in a large pot over medium heat. Add chorizo and cook, breaking it up, until browned and fragrant, about 5 minutes.
- Add diced onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and cook for 1 more minute, stirring often.
- Stir in pumpkin puree and cook for 2-3 minutes to enhance its flavor.
- Pour in chicken broth and stir until smooth. Bring to a gentle simmer. Add smoked paprika, cayenne pepper (if using), salt, and black pepper.
- Simmer for 10-15 minutes. For a smoother texture, use an immersion blender or transfer to a regular blender.
- Reduce heat, stir in heavy cream, and simmer gently for another 5 minutes. Taste and adjust seasoning.
- Ladle into bowls and garnish with parsley, pumpkin seeds, or sour cream.
