Delicious and healthy sweet potato bars with dried cranberries and nuts.

- 0.25 cup cooked and mashed sweet potatoes
- 1.5 cups rolled oats
- 1.0 cup almond flour
- 0.5 cup maple syrup or honey
- 0.25 cup coconut oil, melted
- 1.0 teaspoon vanilla extract
- 1.0 teaspoon baking powder
- 1.0 teaspoon ground cinnamon
- 0.5 teaspoon ground ginger
- 0.25 teaspoon ground nutmeg
- 0.25 teaspoon salt
- 0.5 cup dried cranberries
- 0.5 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- If you haven’t already, peel and dice the sweet potato, then boil or steam it until tender. Mash until smooth and set aside to cool.
- In a large mixing bowl, combine rolled oats, almond flour, baking powder, cinnamon, ginger, nutmeg, and salt. Mix well to ensure the spices and baking powder are evenly distributed.
- In another bowl, whisk together the mashed sweet potatoes, maple syrup (or honey), melted coconut oil, and vanilla extract until smooth.
- Pour the wet ingredients into the bowl with the dry ingredients and stir until fully combined. Fold in the dried cranberries and chopped nuts if using.
- Pour the mixture into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until the bars are set and a toothpick inserted into the center comes out clean.
- Let the bars cool in the pan for about 10 minutes before lifting them out using the parchment paper. Allow them to cool completely on a wire rack. Once cooled, cut into squares or rectangles.
- These bars can be enjoyed warm, at room temperature, or even chilled! Store any leftovers in an airtight container for up to a week, or freeze for later enjoyment.
