Description

Delicious and healthy sweet potato bars with dried cranberries and nuts.


Ingredients

  • 0.25 cup cooked and mashed sweet potatoes
  • 1.5 cups rolled oats
  • 1.0 cup almond flour
  • 0.5 cup maple syrup or honey
  • 0.25 cup coconut oil, melted
  • 1.0 teaspoon vanilla extract
  • 1.0 teaspoon baking powder
  • 1.0 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon salt
  • 0.5 cup dried cranberries
  • 0.5 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. If you haven’t already, peel and dice the sweet potato, then boil or steam it until tender. Mash until smooth and set aside to cool.
  3. In a large mixing bowl, combine rolled oats, almond flour, baking powder, cinnamon, ginger, nutmeg, and salt. Mix well to ensure the spices and baking powder are evenly distributed.
  4. In another bowl, whisk together the mashed sweet potatoes, maple syrup (or honey), melted coconut oil, and vanilla extract until smooth.
  5. Pour the wet ingredients into the bowl with the dry ingredients and stir until fully combined. Fold in the dried cranberries and chopped nuts if using.
  6. Pour the mixture into the prepared baking pan, spreading it evenly. Bake for 25-30 minutes, or until the bars are set and a toothpick inserted into the center comes out clean.
  7. Let the bars cool in the pan for about 10 minutes before lifting them out using the parchment paper. Allow them to cool completely on a wire rack. Once cooled, cut into squares or rectangles.
  8. These bars can be enjoyed warm, at room temperature, or even chilled! Store any leftovers in an airtight container for up to a week, or freeze for later enjoyment.
