- 4 boneless, skinless chicken breasts
- 1 can (14 oz) coconut milk
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon chili flakes (adjust to taste)
- Salt and pepper, to taste
- 1 cup fresh basil leaves, chopped
- Juice of 1 lime
- Cooked rice or quinoa, for serving
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium heat.
- Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion, garlic, and grated ginger. Sauté for 2-3 minutes until fragrant and the onion is translucent.
- Stir in the curry powder, turmeric, and chili flakes. Cook for an additional minute to release the flavors.
- Add the coconut milk to the skillet, stirring to combine with the sautéed mixture. Bring to a gentle simmer.
- Place the cooked chicken back into the skillet. Spoon the sauce over the chicken to coat.
- Stir in the chopped basil and lime juice. Let simmer for another 5 minutes, allowing the flavors to meld.
- Taste the sauce and adjust seasoning with salt and pepper as needed.
- Remove from heat and let it rest for a few minutes before serving.
