Description

Spiced Coconut Basil Chicken is a flavorful dish combining coconut milk, spices, and fresh basil.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) coconut milk
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon chili flakes (adjust to taste)
  • Salt and pepper, to taste
  • 1 cup fresh basil leaves, chopped
  • Juice of 1 lime
  • Cooked rice or quinoa, for serving

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chicken breasts to the skillet and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
  4. In the same skillet, add the chopped onion, garlic, and grated ginger. Sauté for 2-3 minutes until fragrant and the onion is translucent.
  5. Stir in the curry powder, turmeric, and chili flakes. Cook for an additional minute to release the flavors.
  6. Add the coconut milk to the skillet, stirring to combine with the sautéed mixture. Bring to a gentle simmer.
  7. Place the cooked chicken back into the skillet. Spoon the sauce over the chicken to coat.
  8. Stir in the chopped basil and lime juice. Let simmer for another 5 minutes, allowing the flavors to meld.
  9. Taste the sauce and adjust seasoning with salt and pepper as needed.
  10. Remove from heat and let it rest for a few minutes before serving.
