Description

Golden, fluffy, and bite-sized Southern Style Honey Butter Cornbread Poppers glazed with sweet honey butter. These mini cornbread bites are soft inside with a lightly crisp edge, perfect for parties or snacks.


Ingredients

  • 1 cup yellow cornmeal (150 g)
  • 1 cup all-purpose flour (125 g)
  • 1/4 cup granulated sugar (50 g)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk (240 ml)
  • 1/3 cup unsalted butter (75 g), melted
  • 2 large eggs
  • 1/4 cup unsalted butter (55 g), melted (for glaze)
  • 1/4 cup honey (85 g) (for glaze)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a mini muffin pan.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk buttermilk, melted butter, and eggs until smooth.
  4. Pour the wet ingredients into the dry mixture and stir gently until combined. Do not overmix.
  5. Spoon batter evenly into the mini muffin cups, filling each about 2/3 full.
  6. Bake for 12–15 minutes or until golden brown and a toothpick comes out clean.
  7. Melt butter in a small saucepan over low heat. Stir in honey until well blended. Keep warm.
  8. While the poppers are still warm, brush each generously with honey butter glaze or dip them directly into the glaze.
  9. Serve immediately for the best flavor and texture.

Notes

  • Coat the poppers while still warm so the glaze soaks in.
  • Do not overmix the batter to keep the poppers fluffy.
  • For extra crispness, you can place them under the broiler for 1-2 minutes after baking.
