- 1 cup all-purpose flour (125 g)
- 1/4 cup granulated sugar (50 g)
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk (240 ml)
- 1/3 cup unsalted butter (75 g), melted
- 2 large eggs
- 1/4 cup unsalted butter (55 g), melted (for glaze)
- 1/4 cup honey (85 g) (for glaze)
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a mini muffin pan.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk buttermilk, melted butter, and eggs until smooth.
- Pour the wet ingredients into the dry mixture and stir gently until combined. Do not overmix.
- Spoon batter evenly into the mini muffin cups, filling each about 2/3 full.
- Bake for 12–15 minutes or until golden brown and a toothpick comes out clean.
- Melt butter in a small saucepan over low heat. Stir in honey until well blended. Keep warm.
- While the poppers are still warm, brush each generously with honey butter glaze or dip them directly into the glaze.
- Serve immediately for the best flavor and texture.

- Coat the poppers while still warm so the glaze soaks in.
- Do not overmix the batter to keep the poppers fluffy.
- For extra crispness, you can place them under the broiler for 1-2 minutes after baking.
