Description

Ingredients

  • 1 medium Mashed Ripe Banana
  • 3/4 cup Organic Cane Sugar

  • 2 cups Almond Flour

  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Salt
  • For the Frosting:
  • 2 cups Powdered Sugar
  • 4 ounces Cream Cheese
  • 2 tablespoons Butter
  • 1 tablespoon Almond Milk
  • Optional Toppings:
  • 1/2 cup Chopped Walnuts/Pecans

Instructions

  1. In a large bowl, combine melted coconut oil, mashed banana, sugar, egg, and vanilla extract. Mix until smooth and well blended.
  2. Sprinkle in almond flour, coconut flour, baking soda, cinnamon, and salt. Stir gently to form a soft, cohesive dough, then chill it in the fridge for 5 minutes.
  3. Preheat your oven to 350°F. Line a baking sheet with parchment paper.
  4. Roll the chilled dough into golf-sized balls and place them on the prepared baking sheet. Flatten each ball slightly, then bake for 9-12 minutes until the edges are lightly golden.
  5. For the frosting, beat together powdered sugar, cream cheese, butter, and vanilla extract until creamy. Add almond milk if needed to reach desired consistency.
  6. Once the cookies are baked, allow them to cool completely on a wire rack.
  7. Frost each cookie and top with chopped walnuts or pecans and a sprinkle of cinnamon.
