- 1 medium Mashed Ripe Banana

- 1 teaspoon Cinnamon

- For the Frosting:
- 2 cups Powdered Sugar
- 4 ounces Cream Cheese
- 2 tablespoons Butter
- 1 tablespoon Almond Milk
- Optional Toppings:
- 1/2 cup Chopped Walnuts/Pecans
Instructions
- In a large bowl, combine melted coconut oil, mashed banana, sugar, egg, and vanilla extract. Mix until smooth and well blended.
- Sprinkle in almond flour, coconut flour, baking soda, cinnamon, and salt. Stir gently to form a soft, cohesive dough, then chill it in the fridge for 5 minutes.
- Preheat your oven to 350°F. Line a baking sheet with parchment paper.
- Roll the chilled dough into golf-sized balls and place them on the prepared baking sheet. Flatten each ball slightly, then bake for 9-12 minutes until the edges are lightly golden.
- For the frosting, beat together powdered sugar, cream cheese, butter, and vanilla extract until creamy. Add almond milk if needed to reach desired consistency.
- Once the cookies are baked, allow them to cool completely on a wire rack.
- Frost each cookie and top with chopped walnuts or pecans and a sprinkle of cinnamon.
