  • 1 pound smoked sausage, sliced
  • 4 cups baby potatoes, halved
  • 1 cup bell peppers, chopped
  • 1 medium onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large baking sheet or roasting pan, spread the halved baby potatoes evenly.
  3. Place the sliced smoked sausage on top of the potatoes.
  4. Scatter the chopped bell peppers and sliced onion over the sausage and potatoes.
  5. Drizzle the olive oil over the entire mixture. Sprinkle with garlic powder, paprika, salt, and pepper. Toss everything together to ensure even coating.
  6. Place the pan in the preheated oven and roast for 30-35 minutes, or until the potatoes are tender and golden brown.
