Instructions
- Season the chicken thighs with salt and pepper. Place them at the bottom of the slow cooker.
- Layer the sliced onion, bell peppers, and minced garlic over the chicken.
- In a separate bowl, combine the diced tomatoes (with juices), chicken broth, tomato paste, oregano, basil, and red pepper flakes. Stir until well mixed.

- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
- Once cooked, remove the chicken thighs from the slow cooker. Use two forks to shred the chicken into bite-sized pieces.

- Taste and adjust seasoning with more salt, pepper, or herbs, if needed.
