Ingredients

  • 4 bone-in, skinless chicken thighs
  • 1 large onion, sliced
  • 2 bell peppers (any color), sliced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 1 cup chicken broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt and pepper. Place them at the bottom of the slow cooker.
  2. Layer the sliced onion, bell peppers, and minced garlic over the chicken.
  3. In a separate bowl, combine the diced tomatoes (with juices), chicken broth, tomato paste, oregano, basil, and red pepper flakes. Stir until well mixed.
  4. Pour the tomato mixture over the chicken and vegetables in the slow cooker, ensuring everything is coated well.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.
  6. Once cooked, remove the chicken thighs from the slow cooker. Use two forks to shred the chicken into bite-sized pieces.
