- 1 lb chicken breasts
- 1 cup long-grain rice
- 1 can diced tomatoes
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, chopped
- 2 cups chicken broth
- 1 packet taco seasoning
- 2 tbsp olive oil
- 1 lime, juiced
- Fresh cilantro, for garnish
Instructions
- Prepare your ingredients by chopping onions, garlic, bell peppers, and jalapeños; measure rice and spices.
- Heat oil in a heavy-bottomed pot and sear chicken until golden-brown.
- Remove chicken and sauté onions, garlic, and bell peppers until fragrant.
- Return chicken to the pot, add rice, diced tomatoes, taco seasoning, and chicken broth; stir to combine.
- Pressure-cook for 10 minutes, or simmer on the stovetop for 18-20 minutes until rice is tender.
- Remove chicken, shred with forks, return to pot; squeeze lime juice and stir in cilantro.
- Garnish with fresh cilantro, green onions, and avocado before serving.
Notes
This recipe is easily customizable; swap chicken for beans for a vegetarian option or use brown rice for added fiber.
