Ingredients

  • 1 lb chicken breasts
  • 1 cup long-grain rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, chopped
  • 2 cups chicken broth
  • 1 packet taco seasoning
  • 2 tbsp olive oil
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Prepare your ingredients by chopping onions, garlic, bell peppers, and jalapeños; measure rice and spices.
  2. Heat oil in a heavy-bottomed pot and sear chicken until golden-brown.
  3. Remove chicken and sauté onions, garlic, and bell peppers until fragrant.
  4. Return chicken to the pot, add rice, diced tomatoes, taco seasoning, and chicken broth; stir to combine.
  5. Pressure-cook for 10 minutes, or simmer on the stovetop for 18-20 minutes until rice is tender.
  6. Remove chicken, shred with forks, return to pot; squeeze lime juice and stir in cilantro.
  7. Garnish with fresh cilantro, green onions, and avocado before serving.

Notes

This recipe is easily customizable; swap chicken for beans for a vegetarian option or use brown rice for added fiber.
