Ingredients

- 1 tbsp oil or butter
- 1 tbsp fresh ginger, minced
- 2 cloves garlic, minced
- 2 stalks green onions (both white and green parts)
- 1 cup kimchi
- 2 cups Swiss chard, spinach, or bok choy (use any or a mix)
- 1 tbsp Gochujang paste
- 1 tbsp soy sauce
- 1 tbsp honey
- 2 packs pre-cooked udon noodles
- 2 eggs fried (to your liking)
- 1 tbsp sesame seeds (for garnish)
Instructions
- Heat the oil or butter in a wok or large frying pan over medium heat. Add minced ginger and garlic, along with the sliced white parts of the green onion. Stir-fry for about 30 seconds.
- Add the kimchi and your choice of Swiss chard or spinach to the pan. Stir in the Gochujang paste, mixing well to combine all the delicious flavors together. Cook for 2-3 minutes.
- Incorporate the pre-cooked udon noodles into the mix, adding the soy sauce and honey. Stir gently to warm through for about 4-5 minutes.
- Fry the eggs in a separate pan to your liking—sunny-side up works beautifully.
- Top your plated noodles with a fried egg before serving. Finish with a sprinkle of the green parts of the green onions and sesame seeds.
