Description

Savory Kimchi Noodles ready in just 15 minutes, bursting with flavor and perfect for any occasion.


Ingredients

Scale
  • 1 tbsp oil or butter
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 2 stalks green onions (both white and green parts)
  • 1 cup kimchi
  • 2 cups Swiss chard, spinach, or bok choy (use any or a mix)
  • 1 tbsp Gochujang paste
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 packs pre-cooked udon noodles
  • 2 eggs fried (to your liking)
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Heat the oil or butter in a wok or large frying pan over medium heat. Add minced ginger and garlic, along with the sliced white parts of the green onion. Stir-fry for about 30 seconds.
  2. Add the kimchi and your choice of Swiss chard or spinach to the pan. Stir in the Gochujang paste, mixing well to combine all the delicious flavors together. Cook for 2-3 minutes.
  3. Incorporate the pre-cooked udon noodles into the mix, adding the soy sauce and honey. Stir gently to warm through for about 4-5 minutes.
  4. Fry the eggs in a separate pan to your liking—sunny-side up works beautifully.
  5. Top your plated noodles with a fried egg before serving. Finish with a sprinkle of the green parts of the green onions and sesame seeds.
