Description

Savor Chewy French Toast Cookies for Breakfast Bliss is a delightful way to start your day with the comforting flavors of French toast transformed into a chewy cookie.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons pure maple syrup
  • For the Maple Glaze (Optional):
  • 1 cup powdered sugar
  • 1 tablespoon milk (dairy or non-dairy)
  • 1/2 teaspoon maple extract

Instructions

  1. Prep Your Workspace: Preheat your oven to 375°F (190°C). Line two large baking sheets with parchment paper or silicone baking mats.
  2. Whisk Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  3. Cream Butter and Sugars: In a large bowl, beat the softened unsalted butter with the granulated sugar and light brown sugar on medium speed until light and fluffy, about 2-3 minutes.
  4. Add Wet Ingredients: Add the large egg, extra egg yolk, pure vanilla extract, and pure maple syrup to the creamed mixture. Beat on medium speed until well combined.
  5. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture. Mix on low speed until just combined, being careful not to overmix.
  6. Chill the Dough: Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes, or up to 2 hours.
  7. Scoop and Bake: Use a 1.5-tablespoon cookie scoop or roll the dough into balls about 1.5 inches in diameter. Place the balls about 2 inches apart on the prepared baking sheets.
  8. Bake to Perfection: Bake one sheet at a time for 8-10 minutes, or until the edges are lightly golden and set, but the centers still look slightly soft.
  9. Cool and Glaze: Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
  10. Prepare the Maple Glaze (Optional): Whisk together the powdered sugar, milk, and maple extract in a small bowl until smooth. Drizzle the glaze over the cooled cookies and allow it to set.
