Ingredients

  • 1 pound Italian sausage (mild or spicy)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups fresh spinach
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 teaspoon Italian seasoning
  • ½ teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the pot. Sauté for another 3-4 minutes until the onion becomes translucent.
  3. Pour the chicken broth and diced tomatoes into the pot. Stir to combine the ingredients.
  4. Add the Italian seasoning and red pepper flakes (if using). Season with salt and pepper to taste. Bring the mixture to a boil.
  5. Once boiling, add the cheese tortellini to the pot. Cook according to package instructions, usually about 3-5 minutes, until they float to the top.
  6. Stir in the fresh spinach and cook for an additional 2 minutes until wilted.
  7. Taste the soup and adjust the seasoning, adding more salt or pepper if needed.
  8. Ladle the soup into bowls and top with grated Parmesan cheese for added flavor.
