- 1 pound Italian sausage (mild or spicy)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 cups fresh spinach
- 1 package (9 ounces) refrigerated cheese tortellini
- 1 teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Grated Parmesan cheese, for serving
Instructions
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
- Add the diced onion and minced garlic to the pot. Sauté for another 3-4 minutes until the onion becomes translucent.
- Pour the chicken broth and diced tomatoes into the pot. Stir to combine the ingredients.
- Add the Italian seasoning and red pepper flakes (if using). Season with salt and pepper to taste. Bring the mixture to a boil.
- Once boiling, add the cheese tortellini to the pot. Cook according to package instructions, usually about 3-5 minutes, until they float to the top.
- Stir in the fresh spinach and cook for an additional 2 minutes until wilted.
- Taste the soup and adjust the seasoning, adding more salt or pepper if needed.
- Ladle the soup into bowls and top with grated Parmesan cheese for added flavor.
Notes
- If you prefer a lighter option, substitute the Italian sausage with ground turkey or chicken.
- You can also make it vegetarian by using a meat substitute or omitting the meat entirely.
