- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (9-ounce) package refrigerated cheese tortellini
- 2 cups fresh spinach, chopped
- 1 can (14.5-ounce) diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Grated Parmesan cheese, for serving
Instructions
- In a large pot over medium heat, add the Italian sausage. Break it apart with a spoon and cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- Add the diced onion to the pot. Sauté for 2-3 minutes until the onion becomes translucent. Add the minced garlic and cook for an additional minute, stirring frequently.
- Pour in the chicken broth and add the diced tomatoes with their juices. Stir to combine.
- Sprinkle in the dried oregano and red pepper flakes (if using). Season with salt and pepper to taste. Bring the mixture to a boil.
- Once boiling, add the cheese tortellini to the pot. Reduce the heat to a simmer and cook according to the package instructions, usually about 3-5 minutes.
- When the tortellini are tender, stir in the chopped spinach. Cook for an additional 2 minutes until the spinach is wilted.
- Ladle the soup into bowls and top with grated Parmesan cheese if desired.
