  • 2 cups fresh spinach, chopped
  • 1 can (14.5-ounce) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot over medium heat, add the Italian sausage. Break it apart with a spoon and cook until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion to the pot. Sauté for 2-3 minutes until the onion becomes translucent. Add the minced garlic and cook for an additional minute, stirring frequently.
  3. Pour in the chicken broth and add the diced tomatoes with their juices. Stir to combine.
