Ingredients

  • 1 lb cooked salmon, flaked
  • 2 cups sushi rice, cooked
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 1/2 cup Japanese mayo (Kewpie)
  • 2 tbsp sriracha
  • 1/2 cup cream cheese, softened
  • 1/2 cup shredded mozzarella
  • 2 tbsp soy sauce
  • 1 tbsp furikake seasoning
  • Nori sheets (for serving)
  • Sliced cucumber and avocado (optional, for garnish)
  • Green onions, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix cooked sushi rice with rice vinegar, sugar, and salt until well combined.
  3. Spread evenly into the bottom of a greased 9×13-inch baking dish.
  4. In another bowl, combine flaked salmon, cream cheese, Japanese mayo, sriracha, and soy sauce until creamy.
  5. Spread the salmon mixture evenly over the rice layer.
  6. Sprinkle furikake seasoning generously on top.
  7. Add shredded mozzarella cheese evenly over the top.
  8. Bake uncovered for 15–20 minutes until cheese is bubbly and lightly golden.
  9. Remove from oven and garnish with chopped green onions, avocado slices, and cucumber if desired.
  10. Serve warm with nori sheets. Scoop portions onto nori, wrap, and enjoy!
