Description

Remi’s Ratatouille Soup is an amazing dish inspired by the Pixar movie ‘Ratatouille’, bringing Mediterranean flavors to your home with fresh vegetables. It’s a comforting, healthy, vegan, and gluten-free option that’s easy to prepare and visually stunning.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (red or yellow), chopped
  • 1 medium zucchini, sliced
  • 1 medium eggplant, diced
  • 2 medium tomatoes, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped bell pepper and sauté for 3-4 minutes until it begins to soften.
  5. Add the zucchini and eggplant, cooking for about 5 more minutes until they soften.
  6. Stir in the chopped tomatoes and cook until they begin to break down, about 3-4 minutes.
  7. Pour in the vegetable broth and bring to a gentle boil.
  8. Season with dried thyme, basil, salt, and pepper. Stir well.
  9. Lower the heat, cover, and simmer for 20 minutes to allow flavors to meld.
  10. Taste and adjust seasoning if necessary.
  11. Optionally, use an immersion blender to blend the soup to your desired consistency.
  12. Ladle the soup into bowls and garnish with fresh basil leaves if desired.

Notes

  • For best flavor, garnish with fresh basil or thyme before serving.
  • Consider adding red pepper flakes or smoked paprika for a bolder flavor.
  • Feel free to substitute or add other vegetables like carrots or mushrooms.
  • Serve hot to enjoy the rich flavors and aroma.
