Description
A festive holiday breakfast made from soft pancakes stacked into a cute reindeer face — perfect for Christmas morning!
Ingredients
Scale
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup buttermilk (or milk + 1 tsp lemon)
- 1 egg
- 2 tbsp melted butter
- 1 tsp vanilla
- 6 large pancakes + 4 small pancakes (ears and eyes base)
- 2 blueberries (eyes)
- 2 banana slices (eye whites)
- 2 red candies or cranberries (nose — Rudolph style)
- Fresh cranberries (around plate)
- Melted chocolate (for antlers)
- Powdered sugar (snowy effect)
Instructions
- In a bowl: mix flour + sugar + baking powder + baking soda + salt.
- In another bowl: whisk buttermilk + egg + vanilla + melted butter.
- Combine wet and dry mixtures gently — don’t overmix. Let batter rest 5 minutes.
- Heat a non-stick pan over medium heat. Pour batter to form large pancakes (for face) and small pancakes (for ears + under eyes). Cook 1–2 minutes per side until golden.
- Melt chocolate and pipe or drizzle antler shapes onto parchment paper. Freeze 5–10 minutes until solid.
- Stack 2–3 large pancakes for the face. Add 2 small pancakes on the sides as ears. Place banana slices + blueberries for eyes. Add a red candy or cranberry as the nose. Insert chocolate antlers on top. Arrange cranberries around the plate. Dust lightly with powdered sugar for a snowy finish.
