Delightful Red Velvet Snowball Cookies with a soft interior and a powdered sugar finish, perfect for holidays and gifts.

- 1 cup unsalted butter, softened
- 1 2/3 cups powdered sugar
- 1 large egg
- 1/4 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 2 cups all-purpose flour
- 1 tsp vanilla extract
- 1 tsp white vinegar
- Gel food coloring (red)
- Additional powdered sugar for coating
Instructions
- Prep and chill: Line a baking sheet with parchment and set your stand mixer bowl out. Measure 1 cup + 2/3 cup powdered sugar and set aside.
- Cream butter and powdered sugar: Beat butter and 1 2/3 cups powdered sugar on medium speed for about 2 minutes until light and fluffy.
- Add egg and dry ingredients: Lower speed, add the egg, cocoa powder, baking powder, salt, and flour. Mix until just combined, then add food coloring, vanilla, and vinegar.
- Form and chill the dough balls: Scoop 2-tablespoon portions and roll into balls. Place them on a tray, freeze for 15 minutes.
- Preheat oven: While dough chills, preheat to 350°F (175°C).
- Bake: Bake cookies for 12–15 minutes until tops are set but not browned.
- Cool and dust: Let cookies cool on the sheet for 5 minutes, then transfer to a wire rack. Roll each cooled cookie in powdered sugar to coat evenly.
Notes
For a minty twist, add crushed peppermint to the powdered sugar coating. Can be frozen for up to 3 months.
