Ingredients

  • Pinch of salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg (or flax egg)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or thawed raspberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper to prevent sticking.
  3. In a medium bowl, whisk together the flour, baking powder, and salt. Set this bowl aside.
  4. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  5. Mix in the egg (or flax egg) and vanilla extract until well combined.
  6. Gradually add the dry mixture to the wet ingredients, stirring just until combined.
  7. Gently fold in the raspberries, being careful not to crush them too much.
  8. Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 12-15 minutes or until the edges are lightly golden.
  10. Allow the cookies to cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
