Description

Pumpkin Lush is a layered dessert featuring a spiced pumpkin filling and creamy topping, perfect for fall gatherings. This no-bake recipe is easy to make and a guaranteed crowd-pleaser.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 can (15 oz) pure pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1 cup whipped topping
  • 1/2 cup chopped pecans (optional)
  • Additional whipped topping for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour, melted butter, granulated sugar, and cinnamon. Mix until crumbly.
  3. Press the mixture into the bottom of a greased 9×13-inch baking dish to form the crust. Bake for 10-12 minutes, until lightly golden.
  4. Remove the pan from the oven and let it cool completely.
  5. In a bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth. Spread evenly over the cooled crust.
  6. In another bowl, combine the pumpkin puree and pumpkin spice. Mix well and spread over the cream cheese layer.
  7. Spread the whipped topping evenly over the pumpkin layer. Smooth it with a spatula for an even finish.
  8. If using, sprinkle the chopped pecans on top of the whipped topping for added texture.
  9. Cover the dish with plastic wrap and refrigerate for at least 2 hours to allow the layers to set.
  10. Once chilled, cut into squares and serve. Optionally, top with additional whipped topping before serving.

Notes

  • For a richer flavor, use pure pumpkin puree instead of pumpkin pie filling.
  • Ensure the dessert is chilled for at least 2 hours for proper setting.
  • Adjust spices to your preference; add more cinnamon or nutmeg for a spicier taste.
  • For a sophisticated presentation, serve in individual cups or jars.
