Description

A festive focaccia bread shaped like a poinsettia centerpiece, made with roasted peppers and aromatic rosemary.


Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 tsp) instant yeast
  • 1 1/4 cups warm filtered water (about 100°F)
  • 1/4 cup olive oil, plus more for drizzling
  • 1 tsp sea salt
  • 1 tsp granulated sugar
  • 1 tbsp dried rosemary
  • 1 large red bell pepper, sliced
  • 1 cup yellow cherry tomatoes, halved
  • Optional: fresh arugula for garnish

Instructions

  1. Gather and measure all ingredients.
  2. Mix flour, yeast, salt, sugar, rosemary, and water together until a shaggy dough forms.
  3. Prepare a 9×13-inch baking dish by coating it with olive oil.
  4. Transfer the dough into the dish, pressing it to fill the pan.
  5. Cover and let rise in a warm place for 60 minutes.
  6. Preheat the oven to 375°F (190°C).
  7. Create dimples in the dough, arrange the sliced peppers and halved tomatoes, sprinkling with sea salt.
  8. Bake for 25-30 minutes until golden brown.
  9. Drizzle with olive oil, and optionally garnish with arugula before serving.
  10. Slice and serve warm or at room temperature.
