- 2 cups cooked rotini pasta, cooled
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup mini mozzarella balls
- 1/2 cup black olives, sliced
- 1/3 cup diced red bell pepper
- 1/4 cup Italian salad dressing
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook the rotini pasta according to package instructions. Drain and cool completely.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, mozzarella balls, black olives, and red bell pepper.
- Drizzle Italian salad dressing over the mixture. Gently toss until evenly coated.
- Season with salt, pepper, and fresh parsley. Stir to combine.
- Spoon the pasta salad evenly into 12 small party cups. Garnish with additional parsley, if desired. Serve chilled.
