Description

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 ounces pasta (such as fettuccine or penne)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat.
  3. Add chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add minced garlic to the same skillet and cook for about 1 minute until fragrant, being careful not to burn it.
  5. Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat to low.
  6. Stir in grated Parmesan cheese until the sauce is smooth and slightly thickened.
  7. Season with salt and pepper to taste.
  8. Return the cooked chicken to the skillet with the sauce.
  9. Add the cooked pasta to the skillet and toss to coat everything evenly in the creamy Parmesan sauce.
  10. Serve immediately, garnished with fresh parsley.

Notes

  • For a thicker sauce, simmer for a few extra minutes or add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water).
  • You can add vegetables like broccoli or spinach for extra nutrition.
