- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces pasta (such as fettuccine or penne)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat.
- Add chicken pieces to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add minced garlic to the same skillet and cook for about 1 minute until fragrant, being careful not to burn it.
- Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat to low.
- Stir in grated Parmesan cheese until the sauce is smooth and slightly thickened.
- Season with salt and pepper to taste.
- Return the cooked chicken to the skillet with the sauce.
- Add the cooked pasta to the skillet and toss to coat everything evenly in the creamy Parmesan sauce.
- Serve immediately, garnished with fresh parsley.
Notes
- For a thicker sauce, simmer for a few extra minutes or add a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water).
- You can add vegetables like broccoli or spinach for extra nutrition.
