- 1.5 pounds red potatoes, cut into 1-inch chunks
- 3 tablespoons olive oil, divided
- 1.5 tablespoons Cajun seasoning
- 4 cloves garlic, minced
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.25 cup grated Parmesan cheese
- 2 tablespoons fresh chopped parsley
Instructions
- Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or grease it.
- Wash and chop red potatoes into 1-inch chunks. Place in a large bowl. Toss with half the olive oil, half the Cajun seasoning, half the salt and pepper, and all the minced garlic.
- In a separate bowl, toss chicken thighs with the remaining olive oil, Cajun seasoning, salt, and pepper.
- Spread the seasoned potatoes in a single layer on the baking sheet. Nestlé the chicken pieces between the potatoes without overlapping.
- Roast for 35-40 minutes, tossing halfway through.
- Check that chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crispy.
- Remove from oven and immediately sprinkle with Parmesan cheese.
- Finish with fresh chopped parsley. Let rest for 5 minutes before serving.
