  • 1.5 pounds boneless skinless chicken thighs
  • 1.5 pounds red potatoes, cut into 1-inch chunks
  • 3 tablespoons olive oil, divided
  • 1.5 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup grated Parmesan cheese
  • 2 tablespoons fresh chopped parsley

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or grease it.
  2. Wash and chop red potatoes into 1-inch chunks. Place in a large bowl. Toss with half the olive oil, half the Cajun seasoning, half the salt and pepper, and all the minced garlic.
  3. In a separate bowl, toss chicken thighs with the remaining olive oil, Cajun seasoning, salt, and pepper.
  4. Spread the seasoned potatoes in a single layer on the baking sheet. Nestlé the chicken pieces between the potatoes without overlapping.
  5. Roast for 35-40 minutes, tossing halfway through.
  6. Check that chicken reaches an internal temperature of 165°F (74°C) and potatoes are golden and crispy.
  7. Remove from oven and immediately sprinkle with Parmesan cheese.
  8. Finish with fresh chopped parsley. Let rest for 5 minutes before serving.

Notes

  • Do not overcrowd the pan; use two baking sheets if necessary for maximum crispiness.
  • Toss ingredients halfway through roasting for even cooking and browning.
  • Add Parmesan cheese immediately after removing from the oven to allow it to melt slightly.
