- 1 lb boneless, skinless chicken breasts, diced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup bell peppers, diced (any color)
- 1 cup spinach, chopped
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- Salt and pepper, to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions
- In a large pot or skillet, heat the olive oil over medium heat.
- Add the diced chicken to the pot and season with salt, pepper, oregano, and paprika. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Add the chopped onion and garlic to the pot. Sauté for 2-3 minutes until the onion becomes translucent.
- Stir in the diced bell peppers and cook for another 3-4 minutes, allowing them to soften.
- Add the orzo pasta to the pot, stirring to combine with the chicken and vegetables.
- Pour the chicken broth into the pot, bringing it to a boil. Reduce the heat to a simmer and cover the pot.
- Let the mixture simmer for about 10-12 minutes, or until the orzo is tender and the liquid is mostly absorbed. Stir occasionally to prevent sticking.
- Once the orzo is cooked, stir in the chopped spinach and cook for an additional 1-2 minutes until wilted.
- Taste the dish and adjust seasoning with more salt and pepper if needed.
- Remove from heat and serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
