  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (any color)
  • 1 cup spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large pot or skillet, heat the olive oil over medium heat.
  2. Add the diced chicken to the pot and season with salt, pepper, oregano, and paprika. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  3. Add the chopped onion and garlic to the pot. Sauté for 2-3 minutes until the onion becomes translucent.
  4. Stir in the diced bell peppers and cook for another 3-4 minutes, allowing them to soften.
  5. Add the orzo pasta to the pot, stirring to combine with the chicken and vegetables.
  6. Pour the chicken broth into the pot, bringing it to a boil. Reduce the heat to a simmer and cover the pot.
  7. Let the mixture simmer for about 10-12 minutes, or until the orzo is tender and the liquid is mostly absorbed. Stir occasionally to prevent sticking.
  8. Once the orzo is cooked, stir in the chopped spinach and cook for an additional 1-2 minutes until wilted.
  9. Taste the dish and adjust seasoning with more salt and pepper if needed.
  10. Remove from heat and serve hot, garnished with fresh parsley and grated Parmesan cheese if desired.
