Description

This One Pot Creamy Vegetable Soup is a hearty and nutritious meal that’s easy to prepare with minimal cleanup. Packed with vibrant vegetables and a rich, creamy base, it’s a comforting dish perfect for any day.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, diced
  • 2 cups vegetable broth
  • 1 cup heavy cream (or coconut cream for a dairy-free option)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach (or kale)
  • 1 cup corn kernels (fresh or frozen)
  • Fresh parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic; sauté for 2-3 minutes until fragrant.
  3. Stir in sliced carrots, celery, and chopped red bell pepper; cook for 5 minutes until softened.
  4. Add diced zucchini and cook for 3 minutes.
  5. Pour in vegetable broth, dried thyme, dried basil, salt, and pepper; bring to a gentle boil.
  6. Reduce heat and simmer for 10 minutes until vegetables are tender.
  7. Stir in heavy cream (or coconut cream) until combined; simmer for 5 minutes.
  8. Add fresh spinach and corn; cook until spinach wilts.
  9. Taste and adjust seasoning as needed.
  10. Serve hot, garnished with fresh parsley if desired.

Notes

  • For a dairy-free option, use coconut cream instead of heavy cream.
  • Feel free to substitute vegetables based on seasonality or preference.
  • This soup can be made vegan by using coconut cream and ensuring the vegetable broth is vegan.
  • Frozen vegetables can be used as a convenient alternative to fresh.
  • For a smoother texture, an immersion blender can be used to purée part or all of the soup before adding the spinach and corn.
