- 1 cup Orzo
- 1 lb Boneless, skinless chicken breasts
- 2 tbsp Cajun Seasoning
- 1 cup Heavy Cream
- 1/2 cup Freshly grated Parmesan Cheese
- 2 cups Chicken Broth
- 1 Bell pepper, diced
- 1 Onion, diced
- 1 tbsp Oil (for cooking)
- Fresh parsley or green onions (for garnish)
Instructions
- Season the chicken breasts with Cajun seasoning on both sides.
- In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pot and set it aside.
- In the same pot, add another splash of oil if needed, then toss in diced onions and bell peppers. Sauté for about 3-4 minutes until they soften, scraping up any browned bits from the chicken.
- Stir in the orzo and cook for 1-2 minutes to toast it slightly.
- Pour in the chicken broth and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 10-12 minutes, stirring occasionally until the orzo is al dente and has absorbed most of the liquid.
- Once the orzo is cooked, lower the heat and stir in the heavy cream and Parmesan cheese. Mix until everything is well combined and creamy.
- Slice the seared chicken and place it on top of the creamy orzo. Sprinkle with additional Cajun seasoning, and garnish with fresh parsley or green onions.
