Description

This One Pot Cajun Chicken Alfredo Orzo is a delightful fusion of creamy Alfredo sauce and zesty Cajun spices, perfect for quick weeknight dinners. Enjoy a meal that packs a punch in flavor while minimizing cleanup.


Ingredients

  • 1 cup Orzo
  • 1 lb Boneless, skinless chicken breasts
  • 2 tbsp Cajun Seasoning
  • 1 cup Heavy Cream
  • 1/2 cup Freshly grated Parmesan Cheese
  • 2 cups Chicken Broth
  • 1 Bell pepper, diced
  • 1 Onion, diced
  • 1 tbsp Oil (for cooking)
  • Fresh parsley or green onions (for garnish)

Instructions

  1. Season the chicken breasts with Cajun seasoning on both sides.
  2. In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the pot and set it aside.
  3. In the same pot, add another splash of oil if needed, then toss in diced onions and bell peppers. Sauté for about 3-4 minutes until they soften, scraping up any browned bits from the chicken.
  4. Stir in the orzo and cook for 1-2 minutes to toast it slightly.
  5. Pour in the chicken broth and bring the mixture to a boil. Reduce the heat, cover, and simmer for about 10-12 minutes, stirring occasionally until the orzo is al dente and has absorbed most of the liquid.
  6. Once the orzo is cooked, lower the heat and stir in the heavy cream and Parmesan cheese. Mix until everything is well combined and creamy.
  7. Slice the seared chicken and place it on top of the creamy orzo. Sprinkle with additional Cajun seasoning, and garnish with fresh parsley or green onions.
