Description

This Nigerian Beef Stew recipe is rich in flavor and easy to make. It’s a classic dish perfect for serving with rice.


Ingredients

  • 2 lbs beef, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon curry powder
  • 1 teaspoon thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can tomato sauce
  • 1 cup beef broth
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the beef cubes with salt and pepper.
  2. Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef on all sides. Remove beef and set aside.
  3. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  4. Stir in the minced garlic and grated ginger, and cook for 1 minute until fragrant.
  5. Add curry powder, thyme, paprika, and cayenne pepper (if using). Cook for another minute, stirring constantly.
  6. Pour in the tomato sauce and beef broth. Bring to a simmer, scraping up any browned bits from the bottom of the pot.
  7. Return the browned beef to the pot.
  8. Reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
  9. Season with additional salt and pepper if needed.
  10. Serve the rich Nigerian beef stew hot, garnished with fresh parsley.

  • For a deeper flavor, you can marinate the beef overnight.
