Ingredients

- 4 cups Potatoes (Russet or Yukon Gold), diced
- 2 cups Cheddar cheese, shredded
- 1 cup Sour cream
- 1 can (10.5 oz) Cream of chicken soup
- 2 tablespoons Butter
- 1 cup Onions, chopped (optional)
- 1/2 cup Bacon bits (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Melt butter in a pan and prepare the cheese sauce with flour and milk.
- Combine potatoes, cheese sauce, sour cream, and cream of chicken soup in a large bowl.
- Add onions or bacon bits if desired and stir well.
- Transfer the mixture to a casserole dish and smooth the top.
- Bake for about 45 minutes until golden and bubbly.
Notes
This casserole can be prepared a day in advance and stored in the refrigerator before baking. Leftovers can be kept in the fridge for up to 4 days.
