Description

A comforting cheesy potato casserole perfect for potlucks or family gatherings.


Ingredients

Scale
  • 4 cups Potatoes (Russet or Yukon Gold), diced
  • 2 cups Cheddar cheese, shredded
  • 1 cup Sour cream
  • 1 can (10.5 oz) Cream of chicken soup
  • 2 tablespoons Butter
  • 1 cup Onions, chopped (optional)
  • 1/2 cup Bacon bits (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt butter in a pan and prepare the cheese sauce with flour and milk.
  3. Combine potatoes, cheese sauce, sour cream, and cream of chicken soup in a large bowl.
  4. Add onions or bacon bits if desired and stir well.
  5. Transfer the mixture to a casserole dish and smooth the top.
  6. Bake for about 45 minutes until golden and bubbly.

Notes

This casserole can be prepared a day in advance and stored in the refrigerator before baking. Leftovers can be kept in the fridge for up to 4 days.
