Create festive and delicious mini Halloween candy corn cheesecakes. These individual treats feature a graham cracker crust, creamy cheesecake filling, and vibrant orange, yellow, and white layers that mimic the look of candy corn. - For the crust:
- 1 cup (100 g) graham cracker crumbs
- 2 tbsp granulated sugar
- 4 tbsp (56 g) unsalted butter, melted
- For the cheesecake filling:
- 16 oz (450 g) cream cheese, softened
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120 g) sour cream
- For the colors:
- Orange gel food coloring
- Yellow gel food coloring

- Whipped cream
- Candy corn pieces
- Halloween sprinkles
Instructions
- Prepare the crust: Preheat oven to 325°F (163°C). Line a 12-cup muffin tin with cupcake liners. Mix graham cracker crumbs, sugar, and melted butter until combined. Press 1 tablespoon of the mixture into the bottom of each liner. Bake for 5 minutes. Set aside.
- Make the cheesecake filling: Beat cream cheese until smooth. Add sugar and mix. Add eggs one at a time, followed by vanilla extract and sour cream. Mix until smooth, do not overbeat.
- Divide and color the batter: Split the cheesecake batter evenly into three bowls. Leave one plain (white). Tint the second bowl with orange gel food coloring and the third with yellow gel food coloring. Stir until colors are vibrant and evenly mixed.
- Layer the cheesecake batter: Spoon about 1 tablespoon of the yellow batter onto each crust, spreading evenly. Add the orange layer next, and finish with the white batter on top. Smooth the tops with a spatula.
- Bake the cheesecakes: Bake for 18–20 minutes, or until the centers are set but slightly jiggly. Turn off the oven and let them sit inside with the door cracked open for 10 minutes.
- Cool and chill: Remove from the oven and transfer to a wire rack. Allow to cool completely before refrigerating for at least 2 hours or overnight.
- Decorate and serve: Just before serving, top with whipped cream, a piece of candy corn, or festive sprinkles.
