Description

These mini baked potatoes are the perfect easy appetizer for your New Year’s celebration. Crispy on the outside and fluffy on the inside, they’re topped with tangy sour cream, chives, and a sprinkle of cheese for a crowd-pleasing bite.


Ingredients

  • 24 mini potatoes (such as baby Yukon Gold or new potatoes)
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon crispy bacon bits (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash and dry the mini potatoes. Place them in a large bowl and toss with olive oil, sea salt, and black pepper until evenly coated.
  3. Arrange the potatoes on the prepared baking sheet. Bake for 30-35 minutes, or until the potatoes are tender and the skins are crisp.
  4. Remove potatoes from the oven and let them cool slightly. Slice each potato open with a sharp knife, being careful not to cut all the way through.
  5. Top each potato with a dollop of sour cream, a sprinkle of shredded cheddar cheese, chopped chives, and bacon bits if using.
