Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×9-inch baking pan and line with parchment paper if desired.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, beat the softened butter and sugar together until light and fluffy, about 2–3 minutes.
  4. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry mixture to the butter mixture in three parts, alternating with milk. Start and end with the dry ingredients. Mix on low speed or stir gently until smooth. Avoid overmixing.
  6. Pour the batter into your prepared pan and spread evenly. Tap lightly to remove air bubbles.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. The top should be golden and springy.
  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar or drizzle with glaze before serving.
