Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 yellow onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Optional: Cooked pasta for serving

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in garlic and Italian seasoning, and cook for 1 minute more until fragrant.
  4. Return chicken to the pot. Add chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Stir in heavy cream and Parmesan cheese. Cook until heated through, about 5 minutes. Do not boil.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley. Serve hot, optionally over cooked pasta.

Notes

  • For a thicker soup, you can mash some of the cooked vegetables against the side of the pot.
