- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 yellow onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Optional: Cooked pasta for serving
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from pot and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in garlic and Italian seasoning, and cook for 1 minute more until fragrant.
- Return chicken to the pot. Add chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in heavy cream and Parmesan cheese. Cook until heated through, about 5 minutes. Do not boil.
- Season with salt and pepper to taste.
- Garnish with fresh parsley. Serve hot, optionally over cooked pasta.

- For a thicker soup, you can mash some of the cooked vegetables against the side of the pot.
