- White sugar, for coating
Instructions
- Crush the vanilla wafers into fine crumbs using a food processor.
- Combine crushed wafers with ground almonds in a large bowl.
- Melt the white chocolate in the microwave in 15-second bursts, stirring between each interval.
- Blend tequila (or lime juice), orange marmalade, and corn syrup until smooth.
- Pour the citrus mixture and melted chocolate into the dry ingredients. Mix thoroughly until a dough forms.
- Roll the dough into 1-inch balls.
- Roll each ball in white sugar until evenly coated.
- Place on a parchment-lined tray and refrigerate for 30 minutes before serving.
