Ingredients

  • 8 ounces blanched almonds, ground
  • 4 ounces white chocolate, melted
  • 1/4 cup tequila (or lime juice for non-alcoholic version)
  • 1/4 cup orange marmalade
  • 2 tablespoons light corn syrup
  • White sugar, for coating

Instructions

  1. Crush the vanilla wafers into fine crumbs using a food processor.
  2. Combine crushed wafers with ground almonds in a large bowl.
  3. Melt the white chocolate in the microwave in 15-second bursts, stirring between each interval.
  4. Blend tequila (or lime juice), orange marmalade, and corn syrup until smooth.
  5. Pour the citrus mixture and melted chocolate into the dry ingredients. Mix thoroughly until a dough forms.
  6. Roll the dough into 1-inch balls.
  7. Roll each ball in white sugar until evenly coated.
